A California winery has recovered four cases of Cabernet Sauvignon aged on the bottom of Charleston Harbor in South Carolina for three months.
It's the first phase in what Mira Winery of St. Helena, Calif., plans as an ongoing experiment to determine the effects of ocean aging.
Divers on Tuesday recovered four steel mesh cases containing the wine submerged at a depth of 60 feet back in February.
Jim "Bear" Dyke Jr., the Charleston resident who owns the winery, says the wine will be sampled and chemically analyzed. The winery plans to sink more wine for a longer period in the harbor late this summer.
Wine has been aged in the ocean in both Europe and on the West Coast. Mira wants to do a systematic analysis of such aging.
