MT. PLEASANT, SC (WCSC) - An incredible opportunity for one Mt. Pleasant fourth grader who will dine with the first lady at her home on July 9th. Nine-year-old Corbin Jackson is one of 54 kids who won a nationwide recipe contest.
It's hard to believe, but 9-year-old Corbin Jackson has loved Brussels sprouts since he was a toddler, right around the time he started hanging around the kitchen a little more.
"It gets me in a good mood. I'm just like happy when I'm cooking."
So, when his mom saw the "Healthy Lunchtime Challenge" on Facebook, she and her son got to work and brainstormed the "Bring It On Brussels Sprout Wrap." The recipe challenge is all part of the first lady's "Let's Move" initiative.
"Brussels sprouts, chia seeds, avocado, lime juice, pinto beans, spices and whole wheat tortilla."
"When we actually made it and we sat down, and we all ate it together, the whole family, I said Corbin if you do not win, it's because someone else's was better because this recipe is fantastic!"
This will be Corbin's first time in Washington D.C. He says he has many questions for Michelle Obama, but there is one that has been on his mind for awhile.
"Do you ever eat junk food, like candy or anything?"
The recipe challenge is a joint effort between the White House, Epicurious, and the Department of Education and Agriculture.
